  The Appetizer: Prep: The labor-intensive phase in the professional kitchen in which raw ingredients are processed into usable components—washing, chopping, simmering, and fabricating proteins. It is the invisible, heavy work that must be done before the guests arrive and before a single plate ever leaves the pass. Looking back, I realize I spent the first forty-seven years of my life in the prep kitchen, getting everything ready for a service I was too afraid to start.
